½ cup cranberries
3-4 tablespoons coconut oil
Pinch of sea salt & black pepper
1/4 cup cashews or sunflower seeds
1 cup almonds
½ cup organic oats
1 tablespoon vegan vanilla protein powder (optional)
3 tablespoons almond butter
1 teaspoon cinnamon powder (or 5 drops cinnamon essential oil)
5 drops of lemon essential oil (optional)
1/2 teaspoon turmeric powder
¼ teaspoon ginger powder
¼ teaspoon cardamom
¼ teaspoon ground nutmeg
1/3 cup shredded coconut, for coating
Instructions
Soak the dates and cranberries for 1-2 hours
heat coconut oil and use half of it to add the turmeric, salt and black pepper and stir well (this will activate the turmeric which means your body will absorb all its goodness) and set aside.
Place the cashews and almonds in a food processor and blend for 10-15 seconds. Add the oats and protein powder, then add dates, cranberries, almond butter and essential oils (if used) into the dry mixture.
Add turmeric, ginger powder, cardamom & nutmeg. It should now be a doughy consistency.
Divide the dough into balls, if dough is very dry, use coconut oil to roll the balls in first, then roll in shredded coconut. Alternative coatings are beetroot powder, matcha green tea powder or chia seeds.
Place on baking paper and place in the freezer for a min of 30 minutes.
